Brenda Benedict's Easy French Bread

"This is the easiest-to-make-bread known to mankind. Plus, it is delicious and you will be known and man will be kind!" - Brenda Benedict

Ingredients:
3 C water (very warm)
2 T yeast
4 T sugar
1 T salt
2 T oil
8 C flour (approximate)

Directions:
Mix water, yeast, and sugar. Let proof 10 min while you get everything else ready. Add remaining ingredients. Add about 8 cups of flour or until it is just right. "You know, it is almost-not-sticky. . . and when you kneed it and slam it down on the counter it smiles and relaxes itself for a while."

Cut into 4 loaves, 12-14 inches long and about an inch round. Cut 4 slits sideways across each loaf top. Let raise a lot. . . double or tripple. . . or a lot. Bake at 350 for 30 min or until just lightly browned. Remove, butter the tops. Sprinkle some cheese on top while hot if you like.
