Ginger Pear Preserves (Ball)

5 1/2 C finely chopped cored peeled pears
zest and juice of 3 limes
2 1/3 C sugar
1 T grated ginger root

Combine all ingredients in large stainless steel sauce pan. Bring to a boil over medium heat, stirring to dissolve sugar. Boil, stirring constantly until gel stage (check at 15 min).

Can using normal procedures, 1/4 head space, process 10 min
