Pear Salsa

1 C white vingegar
8 C Coarsely chopped cored peeled pears
3 red bell peppers seeded, coarsely chopped
3 green bell peppers seeded, coarsely chopped
1 cup sugar
2 T salt
2 t dry mustard
1 t ground turmeric
1/2 t ground allspice
1/2 t freshly ground black pepper

Combine vinegar, pears, peppers, sugar, salt, and spices. Bring to a boil over medium-high heat, stirring constantly. Reduce heat and boil gently, stirring frequently, until slightly thickened (5 min).

Ladle into jars, leave 1/2 in head space, process in water bath, 10 min
