Gaye’s Famous Libby Pumpkin Pie

2 Eggs slightly beaten
1 16 oz. Can Pumpkin
¾ C Sugar
½ t salt
1 t Cinnamon
½ t Ginger
¼ t Cloves
1 2/3 C Evaporated Milk (13 oz. Can)
1 9 inch unbaked pie shell with high fluted edges
Mix filling ingredients in order given. Pour into pie shell.
Bake in preheated 425 degrees oven for 15 minutes.
Reduce temperature to 350 degrees and continue baking for 45 minutes, until knife inserted in center of pie filling comes out clean. Cool.

Garnish with Whipping Cream. I cover the edges of the pie with foil until the last 30 minutes then I remove the foil. Otherwise the edges get too brown.
