Roasted Pumpkin Seeds

After you have scooped out a pumpkin, toast the seeds into a tasty and healthy Halloween snack.

First, separate the seeds from all the pumpkin fiber, rinse them in water, and pat dry on paper towel. In a small bowl, toss the seeds with 2 T of vegetable oil and sprinkle lightly with salt.

Transfer the seeds to a baking sheet and spread out evenly. Bake at 300 degrees for 30 to 40 minutes until light brown. Cool.

I have even boiled them with the oil and salt first before roasting. It plumps them.
