Red Hot Apples

1 1/2 C Sugar
1/2 C cinnamon red hot candies
2 cinnamon sticks
2 t whole cloves
1 t ground ginger
2 C water
1 1/2 C vinegar
2/3 C light corn syrup
2 t red food coloring (optional)
24 Medium apples, peeled, cored, and cut into eighths lengthwise.

Combine sugarn, cinnamon candies, cinnamon sticks, cloves, ginger, water, vinegar, corn syrup, and red food coloring. Bring to a boil over medium-high heat, stirring frequently. Add apples, stir gently until apples are heated through (5-7 min). Discard cinnamon sticks. Turn off heat (keep pot on stove so that it is warm).

Fill jars with apples (using a slotted spoon) leaving 1/2 - 3/4 inch headspace. Ladle hot liquid into jars to cover apples.
