Yummy Orange Plum Jam

5 C finely chopped pitted plums
2 T Orange zest
1 package regular powder pectin
5 1/2 C sugar

This is a classic pectin recipe follows the basic jelly steps for all pectin reipes. Initial variants of this recipe came from the ball complete book of home preserving, p. 36

Puree plums and combine with orange zest in a large sauce pan. Whisk in pectin until dissolved. Bring to a boil over high heat stirring frequently. Add all sugar at once, returning to a full boil, stirring constantly. Boil hard, stirring constantly for 1 min. Remove from heat, skim foam.

Use standard canning procedure, 10 min.
